Pumpkin Cake With Dates Recipe

Ingredients :

butter

caster sugar

grated orange rind

vanilla extract

eggs

chopped dates

ground almonds

pumpkin, cooked and mashed

self raising flour

milk

Method :
  1. Cream the butter, sugar, orange rind and vanilla until light and fluffy.

  2. Add the eggs one at a time, beating well after each addition.

  3. Stir in the dates, almonds and mashed pumpkin; mix well.

  4. Add a little of the sifted flour, then some of the milk and stir into the mixture.

  5. Continue to do this until all the ingredients have been used.

  6. Spread the mixture into a greased, and lined 20 cm square cake tin.

  7. Bake in a preheated moderate oven 160C/325F/Gas 3 for 1 hour or until cooked when tested with a cocktails stick.

The addition of rich, nourishing dates adds on extra dimension of sweetness to this vegetable based bake.
