Pecan Pie Recipe

Ingredients :

200 g pecan nuts

225 g plain flour

pinch of salt

1/2 tsp mixed spice

125 g mixture margarine and white cooking fat or lard

3-4 tbsp cold water to mix

Filing :

25 g butter or margarine, melted

175 g caster sugar

225 g golden syrup

3 Grade 3 eggs

1 tsp vanilla essence

Method :
  1. Lightly toast pecan nuts.

  2. Leave on one side temporarily.

  3. Fro pastry, sift flour, salt and spice into a bowl.

  4. Rub in fast finely then mix to stiff dough with water.

  5. Turn out on to a floured surface, knead lightly until smooth then roll out fairly thinly.

  6. Use to line a 10" (25 cm) greased pie plate or flan ring standing on a greased baking tray.

  7. Sprinkle base with pecans.

  8. Whisk rest of ingredients well together then pour into pastry case over pecans.

  9. Bake 3/4 hour in oven 375F, Gas 5.

  10. Remove flan ring (if used), leave pie until lukewarm then cut into wedges and serve with the cream.

A United States special and one of the most favored pies in the deep south of the country. It is unbelievably sweet so serve with plain whipped cream.
