Preheat the
oven to 350F. Place the whole grain bread cubes in a large bowl. Add the
grated apple, dried fruits, milk, Sucanat, cornstarch, cinnamon, nutmeg,
and salt. Mix well, then spoon into a 9 x 9 inch baking dish. Cover with
foil and bake for 35 minutes. Remove from the oven and discard the foil.
To prepare
the sweet white sauce, mix the milk, Sucanat, cornstarch, and salt in a
saucepan and heat, stirring constantly, until thickened. Stir in the
vanilla and pour over the baking pudding before serving.
Chunks of
dried fruit and a sweet white sauce topping make this bread pudding
quite special.
