Cheese Puff Pudding Recipes

Ingredients :

275 ml milk

125 g soft white breadcrumbs

125 g Cheddar cheese, finely grated

1 tsp prepared mustard

1 tsp mild curry powder

50 g onion, peeled and finely grated

1 tsp salt

1 tsp paprika

40 g salted peanuts, coarsely chopped

2 Grade 2 eggs, separated

1/4 tsp vinegar

Method :
  1. Well grease a 1.5 liter deep heatproof dish.
  2. Set oven to moderately hot, 375F, Gas 5.
  3. Heat milk in fairly large saucepan until lukewarm.
  4. Mix in crumbs and stir over medium heat until thick and smooth.
  5. Gently beat in cheese, mustard, curry powder, onion, salt, paprika, peanuts and egg yolks.
  6. Whisk egg whites and vinegar to a stiff snow.
  7. Using a large metal spoon or spatula, fold gently into breadcrumb mixture until smooth and evenly combined.
  8. Pour into prepared dish and bake 35-40 minutes or until well risen and golden brown.
  9. Serve straight away.

Soufflé like and fairly economical to make, this is a worthwhile midweek dish served with baked tomato halves and mushrooms.
