Barley Cake Recipes

Ingredients :

1 cup cooked barley

60g rolled oats

250g grated pumpkin

2 eggs

1/2 tsp salt

1/2 tsp raw sugar

1 tsp celery seeds

60g grated cheese

1 tbsp bran flakes

Method :
  1. Put barley, oats and pumpkin together in a bowl and mix well with eggs, salt, sugar and celery seeds.
  2. Grease a small casserole and press the mixture in.
  3. Grate cheese on top, cover with bran and bake with lid on for 20 minutes, removing lid for the last 10 minutes of cooking.

Oven - 325F

Serves 4 - 6
