Baked Custard Recipe

Ingredients :

3 eggs

2 tbsp caster sugar

500ml skimmed milk

few drops of vanilla extract

few drops of grated nutmeg

Method :
  1. Lightly beat together the eggs and sugar.
  2. In a saucepan, heat the milk until it begins to foam at the edges (scald).
  3. Gradually add the scalded milk to the egg mixture, stirring constantly.
  4. Stir in the vanilla.
  5. Pour mixture into the baking dish or dishes.
  6. Sprinkle over a little grated nutmeg.
  7. Stand the baking dish in a larger, ovenproof dish.
  8. Carefully pour enough hot water into the outer dish to reach two thirds up the outside of the baking dish.
  9. Bake in a preheated oven - 40 minutes for individual dishes, 50 minutes for one big dish - or until lightly browned and set in the center.
  10. Serve baked custard hot or cold.
  11. If you like, serve with Dried Fruit Compote.
