Method :
- Combine the butter and sugar in a mixing bowl.
- Stir in the banana, lemon juice and eggs and mix
well.
- Sift together the flour, baking powder, baking
soda, salt and nutmeg in another bowl.
- Combine the mixtures, stirring until the flour is
just incorporated and then stir in the pecans.
- Line a 8" square microwavable baking dish with
wax paper.
- Pour the batter into the dish and microwave on
high 100% for 7-9 minutes until a toothpick inserted in the center
comes out clean.
- Rotate the dish a quarter turn every 2 minutes of
cooking time.
- Remove the bread from the oven and let it rest in
the pan for another 5 minutes.
- Turn the bread out onto a wire rack and let it
cool for 10 minutes.
- Peel off the wax paper and cut the bread into 16
squares.
Makes 16 2-inch squares
Note :
This excellent bread is cooked in just
eight minutes. Spread thinly with butter, the squares make a delicious
snack served with a glass of cold milk.
Cooking Tip :
Bake quick breads in the microwave in dishes lined with
wax paper. This prevents them from becoming soft on the bottom.
