8 wedges Turkish bread, or any preferred,
thickly sliced bread
2 tbsp olive oil, for brushing
cilantro (coriander) leaves, for garnish
Method :
Preheat oven to
225F (110C / Gas 1/4). Place olive oil, wine, vinegar, sugar, coriander
seeds and pepper in a shallow saucepan large enough to hold asparagus.
Bring mixture to a boil over medium heat, then reduce heat to low. When
mixture is at a steady simmer, add asparagus and cook until tender-crisp,
about 5 minutes. Remove asparagus from pan, place in an ovenproof baking
dish and keep warm in oven.
Continue to
simmer remaining cooking liquid until it has reduced by half, about 5
minutes. Remove asparagus from oven and pour liquid over asparagus.
Preheat a
broiler (grill). Brush both sides of bread with olive oil. Broil (grill)
until golden, 1-2 minutes per side.
Serve asparagus
at room temperature sprinkled with fresh cilantro leaves. Accompany with
grilled bread.
