Heat the butter and oil in a saucepan, then cook the shallot
gently, stirring occasionally, until soft but not colored.
Add the turnips to the shallot and heat, shaking the pan
frequently, until the turnips seem to be absorbing the butter and
oil.
Pour the orange juice on to the turnips, then simmer gently for
about 30 minutes, until the turnips are tender and the orange juice
reduced to a buttery sauce.
Serves 4
Sprinkle toasted nuts such as flaked almonds or chopped walnuts or
hazelnuts over the turnips to add a contrasting texture and taste.
Cooking Tip :
You could add some spice such as ground ginger, cinnamon or crushed
cumin seeds.
