Prune Roll-Ups Recipes

Ingredients :

24 stoned prunes, well washed

cold tea or cider

24 blanched whole almonds

12 rashers of streaky bacon, de-rinded if necessary and halved

Method :
  1. Soak prunes in a mixture of cold tea or cider until they soften and look fleshy and plump.
  2. Drain thoroughly.
  3. Put a whole almond into each then wrap round with half a bacon rasher.
  4. Secure bacon with cocktail sticks then grill until bacon crispness, turning once.
  5. Drain on crumpled kitchen paper then transfer to a d'oyley-lined plate.
  6. Serve straight away.

Makes 24

An idea drinks party nibble, these are very easy to make and can be prepared ahead of time, left in the refrigerator and grilled just before eating.
