Parsnips With Almonds Recipes

Ingredients :

450 g

35 g

25 g

15 ml

15 ml

small parsnips

butter

flaked almonds

soft light brown sugar

lemon juice

salt and black pepper

pinch of mixed spice

chopped fresh chervil or parsley, to garnish

Method :
  1. Cook the parsnips in boiling salted water until almost tender.
  2. Drain well.
  3. When the parsnips are cool enough to handle, cut each in half across it width.
  4. Quarter the wide halves lengthways.
  5. Heat the butter in a frying pan.
  6. Add the parsnips and almonds and cook gently, stirring and turning the parsnips carefully until they are lightly flecked with brown.
  7. Mix together the sugar and mixed spice, sprinkle over the parsnips and stir to mix, then trickle over the lemon juice.
  8. Season and heat for 1 minute.
  9. Serve sprinkled with chopped fresh chervil or parsley.

Serves 4

Parsnips have an affinity with most nuts, so you could substitute walnuts or hazelnuts for the almonds.

Cooking Tip :

You could replace the mixed spice with Chinese five spice powder, if you prefer.
