Nut Stuffed Eggs Recipes

Ingredients :

8 Grade 1 or 2 eggs

2 rounded tbsp thick mayonnaise

1 rounded tbsp soured cream

2 tsp lemon juice

1 tsp prepared mustard

40 g hazelnuts, finely chopped

1 small can (about 90 g) tuna, drained and finely mashed

Garnish :

peeled onion slices separated into rings

bright orange lumpfish "caviar' (sold in jars and often called mock caviar)

or 16 black olives

lettuce, finely shredded

Method :
  1. Hard-boil eggs then shell and halve lengthwise.
  2. Carefully remove yolks and put into bowl.
  3. Mash finely then mix in mayonnaise, soured cream, lemon juice, mustard, hazelnuts and mashed tuna.
  4. Mound smoothly into egg white halves then garnish each with 1 or 2 onion rings and either the orange lumpfish caviar or olives.
  5. Arrange on a lettuce lined plate.

Makes 16 halves
