Noodles with Pesto Recipes

Ingredients :

1 oz basil leaves

1 oz parsley, minus stalks

1 oz pine nuts or walnuts

1 oz soft butter

3 oz Parmesan cheese, cubed

3 tbsp light olive oil or corn oil if preferred

1 garlic clove, peeled

2 tbsp boiling water

1 lb freshly cooked flat noodles


Method :
  1. Tip first 7 ingredients into a food processor and run machine till it form a paste.
  2. Spoon into a bowl and beat in boiling water.
  3. Season to taste with salt.
  4. Use half with the noodles.
  5. Spoon remainder into a small pot or jar, cover with oil the over wrap with cling film.
  6. Store up to 2 months in the refrigerator.
