Eastern Style Rice Starter Recipes

Ingredients :

6 oz long grain rice

12 oz boiling water

2 tsp salt

8 oz cold cooked chicken, cut into tiny dice

4 oz boiled gammon, cut into tiny dice

3 oz onion, peeled and grated

1 large celery stalk, scrubbed and thinly sliced

1 can mandarin oranges, drained

2 oz whole blanched almonds, toasted, cut into spikes

1 small can evaporated milk

2 tsp salad oil

2 tbsp lemon juice

1 tbsp wine vinegar

1 lb blanched tomatoes, skinned and thinly sliced

3 tsp unpeeled, diced cucumber

white pepper

Method :
  1. Cook rice in the boiling water and salt for 14-16 minutes or until grains are plump and tender and have absorbed all the liquid.
  2. Keep pan covered and leave rice undisturbed.
  3. Cool completely and tip into bowl.
  4. Add chicken, gammon, onion, celery, 2/3 of the mandarins and half the almonds.
  5. Beat milk with oil, lemon juice, vinegar, salt and pepper to taste.
  6. Pour over the rice mixture and toss well with 2 spoons.
  7. Line 6 small plates with tomatoes then mound rice salad on top of each.
  8. Garnish with remaining mandarins, almonds and cucumber dice.
