Cucumbers with Garlic Yogurt Recipes

Ingredients :

2 large cucumbers, seeded and thinly sliced

1 small red onion, thinly sliced

1/4 cup rice vinegar, or white vinegar and water in equal amounts

1 tbsp fresh lemon juice

1 large clove garlic, minced

1 tbsp minced basil, parsley, or thyme, or mixture

salt and freshly ground pepper to taste

3/4 cup plain low-fat dairy yogurt or soy yogurt

Method :
  1. Slice cucumbers and onion. Place in a medium mixing bowl; set aside. In a small bowl, mix vinegar, lemon juice, garlic, herbs, salt and pepper to taste. Stir in yogurt; pour over cucumbers and onion. Cover, chill, and toss before serving.
