Cracked Wheat and Fennel Recipes

green
beans, chopped and blanched

orange
garlic
clove, crushed
sunflower
oil
white wine
vinegar
red or
orange pepper, seeded and finely chopped, to garnish
salt and
black pepper |
Method :
- Place the wheat in a bowl and
cover with boiling water.
- Leave for 10 - 15 minutes,
stirring occasionally.
- When doubled in size, drain well
and squeeze out any excess water.
- While still slightly warm, stir in
the chopped fennel and the green beans.
- Finely grate the orange rind into
a bowl.
- Peel and segment the orange and
stir into the salad.
- Add the crushed garlic to the
orange rind, then add the sunflower oil, white wine vinegar, and
seasoning to taste, and mix thoroughly.
- Pour this dressing over the salad,
mix well.
- Chill the salad for 1 - 2 hours.
- Serve the salad sprinkled with the
chopped red or orange pepper.
