Capsicum Surprise Recipes

Ingredients :

4 red capsicums

30g butter

garlic, optional

2 large tomatoes

1 onion

salt, pepper

60g brown rice, cooked

basil, coriander, marjoram

whole meal crumbs

Method :
  1. Cut the top off the capsicums, de-seed and hold under a tap of wash out any remaining seeds.
  2. Drain and stand in a buttered 0.5 liter casserole.
  3. If using garlic, now is the time to rub it gently around the inside of the dish.
  4. Mix chopped tomato, finely chopped onion and salt and pepper together with the rice.
  5. Add a dash of herbs and fill each capsicum, tamping it down, as the stuffing sinks in cooking.
  6. Top liberally with breadcrumbs, dot with butter and bake 45 minutes in a oven.
  7. Serve with pork or mutton chops and creamed potatoes.

Oven 350F

Serves 4 - 6
