Beans With Tomatoes Recipes

Ingredients :

675 g

40 g


runner beans, sliced


ripe tomatoes, peeled and chopped

salt and black pepper

chopped fresh tarragon, to garnish

Method :
  1. Add the beans to a saucepan of boiling water, return to the boil, then boil for 3 minutes.
  2. Drain well.
  3. Heat the butter in a saucepan and add the tomatoes, beans and seasoning.
  4. Cover the pan and simmer gently for 10 - 15 minutes, until the beans are tender.
  5. Tip the beans and tomatoes into a warm serving dish and sprinkle over the chopped tarragon.
  6. Serve hot as an accompaniment.

Serves 4

Note :

Young runner beans should not have "strings" down the sides, but older ones will and they should be removed before cooking.

Cooking Tip :

French beans can be used instead of runner beans, but reduce the cooking time slightly.
