Winter Vegetable Platter with Rouille Recipes
4 tbsp lemon juice
3-4 tsp clear honey
1 tsp ground cinnamon
1/4 tsp chili powder, to taste
2 tbsp olive oil
1.5 lb sweet potatoes, cut into 1/2 inch
1 onion, finely chopped
2 garlic cloves, finely chopped
4 tbsp water
- Mix together 1 tbsp of the lemon
juice and all of the honey, cinnamon and chili powder.
- Set aside.
- Heat the oil in a large, heavy
frying pan, add the sweet potatoes and cook for 10 minutes, stir.
- Add the onion, garlic, salt, the
remaining lemon juice and the measured water.
- Cook for 5 minutes, stir, until
onion begins to brown.
- Add spiced honey mixture, cook for
2 minutes, stir, ready to serve.
