Put the onion, garlic and mushrooms in a
microwaveable bowl and microwave on high for 2-3 minutes until the
onions are softened and the mushrooms tender.
Toss the mushrooms mixture with the
cheese and tomato, and sprinkle with the parmesan.
Open the pita pockets and spoon an equal amount
of filling into the pocket of each one.
Lay each sandwich on several layers of paper
Lay on additional paper towel over each and fold
the corners under to make a package.
Microwave the sandwiches on high for 1-2 minutes
to warm them and allow the cheese to melt slightly.
A vegetarian sandwich that will easily
fill the gap between meals when a hearty but healthy snack is in order.
This also makes a good lunch: fill the sandwich and carry it to the
office to microwave there.
