Crunchy Vegetable Loaf Recipes

Ingredients :

2 tbsp water

2 medium onions, chopped

2 sticks of celery, chopped

1/2 green pepper, chopped

2 tsp curry powder

100g cooked potato, mashed

100g cooked pumpkin, mashed

250g ricotta cheese

125g cashew nuts, coarsely ground

45g rolled oats

2 tbsp chopped parsley

1 tsp fresh chopped thyme or 1/4 tsp dried

sesame seeds, topping

Method :
  1. In a frying pan, heat the water.
  2. Add the onions, celery, green capsicum and curry powder.
  3. Sauté for 3 minutes.
  4. In a bowl, combine the sautéed vegetables with the rest of the ingredients.
  5. Line a loaf tin with foil and spray with non stick baking spray.
  6. Sprinkle sesame seeds over base of tin, then shake tin so that seeds adhere to sides as well.
  7. Spoon vegetable mixture into the tin and press down firmly.
  8. Bake in preheated oven for 40 minutes.
  9. Remove from oven and leaves for 5 minutes.
  10. Turn on to serving dish and carefully remove foil.
  11. Place under the hot grill for 3-5 minutes or until crisp and well browned.
  12. Serve immediately.

As an main course : Cut the loaf into thick slices, spoon over hot simple curry sauce and serve.

As a light meal or lunch : Serve the loaf cold with a salad of sliced cucumbers in Vinaigrette Dressing.
