Stuffed Potatoes Recipes

Ingredients :

large potatoes, washed

large onion, peeled and sliced

frozen or fresh peas

green capsicum (pepper), chopped

sweet corn kernels

natural yoghurt

pine nuts

sunflower seeds (optional)

soy sauce

grated tasty cheese

Method :
  1. Prick the washed potatoes.
  2. cook on HIGH power (100%) power for about 12-16 minutes, or until just soft.
  3. Cover, leave to stand while you prepare the filling.
  4. Cook the onion with remaining vegetables on HIGH (100%) power for 4-5 minutes, covered with a lid or plastic wrap.
  5. Slice the tops off the potatoes.
  6. Scoop out the centers, leaving about 1 cm thickness of potato inside the skins.
  7. Chop the scooped potato and the lids.
  8. Mix them with the yoghurt, seeds and the onion and vegetable mixture.
  9. Blend in soy sauce.
  10. Pile the mixture back into the skins.
  11. Sprinkle with grated cheese.
  12. Return to the microwave.
  13. Cook on HIGH (100%) power for 3-6 minutes or until heated through.
  14. When the cheese has thoroughly melted, the potatoes should be done.
