Spanish Omelette Recipes

Ingredients :

olive oil

large potato, peeled and diced

large Spanish onion, peeled and finely chopped

eggs

freshly ground black pepper, to taste

Method :
  1. Heat the oil in a large frying pan.
  2. Sauté the potato and onion, stirring occasionally, until both are cooked but not brown.
  3. Whisk the eggs with pepper.
  4. Pour into the pan with vegetables, spreading evenly.
  5. Cover the pan, lower the heat and allow the omelets to cook for about 10 minutes.
  6. Place a plate of similar size to your frying pan over the top of it.
  7. Invert the omelets.
  8. Return it immediately to the pan.
  9. Allow the other side to brown.
  10. It will be thick and golden in color when it is ready.
  11. Serve in wedges with salad.
