Cook potatoes in boiling water
until tender. Drain well, mash with the egg
yolks and butter until creamy. Add the flour, pepper and chives. Mix well, form the dough into a
round shape. Refrigerate for 30 minutes. Roll dough out into a rectangle
1cm thick. Cut into sticks 1cm wide and 6cm
long. Twist and brush lightly with some
beaten egg. Place on a greased baking
tray. Bake in a hot oven 200C (400F) for
10 minutes or until golden brown and crisp. Leave on the tray until they are
cool. Serve as a meal accompaniment or
snack.
