Bring a large pan of water to a boil. Cut
potatoes into large pieces and cook in the water about 30 minutes or
until tender. Drain the potatoes. Use a potato ricer or sieve and return
them to the saucepan. Or mash them in the saucepan. Add the remaining ingredients and mash or
beat the potatoes until smooth and well mixed. Taste and correct
seasoning. Reheat when ready to serve.
