Gingered Vegetables Cooking Recipes

Ingredients :

carrots, sliced into 1/4 inch rounds

cauliflower, separated into florets


ground nutmeg


powdered ginger

green pepper, stemmed, seeded and cut into strips

medium size zucchini (about 5 ounces) cut into 1/4 inch rounds

lemon juice

Method :
  1. Combine the carrots and cauliflower in a 4 quart microwavable casserole.
  2. Dot with the butter.
  3. Sprinkle with the nutmeg, salt and ginger and mix.
  4. Cover and microwave on high 100% for 12 minutes, stirring twice.
  5. Add the green pepper and the zucchini.
  6. Microwave on high 100% for 3 minutes until the vegetables are crisp tender.
  7. Sprinkle with lemon juice before serving.

Serves 8

Note :

A hint of ginger adds zest to this vegetable medley.
