Ingredients :

large carrots, sliced thinly

green beans, strung

bean sprouts

shredded cabbage

large onion, peeled and chopped

cucumber, sliced thinly

hard-boiled eggs

chopped spring onions, to garnish

 

unsalted roasted peanuts

sugar

cloves garlic, peeled

lemon juice or vinegar

Method :
  1. Blanch carrots in boiling water for 2 minutes, drain.
  2. Slice beans diagonally.
  3. Blanch 2 minutes, drain.
  4. Blanch bean sprouts, cabbage and onion for 1 minute, drain well.
  5. Toss vegetables together.
  6. Arrange on a platter with cucumber and sliced eggs, set aside.
  7. Combine all sauce ingredients.
  8. Process in a food processor until mixture is thick and smooth.
  9. Drizzle sauce over vegetables.
  10. Garnish with spring onions.
