Collard and Carrot Raita Recipes

Ingredients :

1/2 pound collard greens, chopped

2 cups soy yogurt

1/2 cup shredded carrot

1/4 cup raisins

1 tsp sea salt

1/2 tsp black pepper

1 tsp ground cumin

Method :

Lightly steam collard greens, just until bright green. Rinse under cold water to stop cooking. Blend yogurt with carrot, raisins, salt, pepper and cumin. Stir in cooled collard greens. Chill thoroughly before serving. This yogurt based salad is traditionally served as a cooling accompaniment to hot and spicy Indian dishes. Try it with Indian Vegetable Curry.
