Braised Parsnips with Chopped Eggs and Tomatoes Recipes

Ingredients :

1 tbsp

parsnips, peeled and sliced

butter or margarine

medium-sized onion, peeled and chopped

clove garlic, crushed

tomatoes, skinned, seeded and chopped

hard-boiled eggs, chopped

chopped parsley

freshly ground pepper, to taste

Method :
  1. Place parsnips in a saucepan with just enough water to cover.
  2. Boil water for 15 minutes, drain well.
  3. Melt butter in a frying pan.
  4. Sauté onion and garlic until tender but not colored.
  5. Add tomatoes, parsnips and seasoning.
  6. Transfer mixture to a shallow ovenproof dish.
  7. Bake in a hot oven 200C (400F) for 20 minutes.
  8. Serve sprinkled with chopped egg and parsley.
