Method :
- Combine the carrots, lima beans and corn in a
2-quart microwavable casserole.
- Cover and microwave on high 100% for 9-12 minutes
or until the vegetable have completely thawed and are tender,
stirring after 41/2 minutes.
- Add the half and half, butter, thyme, salt and
pepper and stir to combine.
- Cover and cook on high 100% for 2-4 minutes or
until heated through.
Serves 8
Note :
A slightly more traditional succotash uses
only lima beans and corn, but adding carrots given the familiar dish
color, texture and improved flavor.
