Summer Beans and Sprouts Recipes

Ingredients :

450 g French beans

50 g butter

1 tbsp oil

1 small onion or 4 spring onions

100 g Mung (Chinese) bean sprouts

2 tbsp chopped fresh parsley

pinch of ground nutmeg

salt and pepper

Method :
  1. Cook the whole beans in boiling salted water until tender.
  2. Drain well.
  3. Heat the butter and oil and cook the finely chopped onion or spring onions over low heat until soft and golden.
  4. Add the bean sprouts and stir quickly.
  5. Add the cooked beans and toss until the beans are hot.
  6. Sprinkle with parsley, nutmeg, salt and pepper and put into a warm serving dish.

Note :

An original way of serving young French beans to make them into a very special vegetable dish, particularly good with chicken or fish.

Serves 4 - 6
