Summer Beans and Sprouts Recipes
450 g French beans
50 g butter
1 tbsp oil
1 small onion or 4 spring onions
100 g Mung (Chinese) bean sprouts
2 tbsp chopped fresh parsley
pinch of ground nutmeg
salt and pepper
- Cook the whole beans in boiling
salted water until tender.
- Drain well.
- Heat the butter and oil and cook
the finely chopped onion or spring onions over low heat until soft
- Add the bean sprouts and stir
- Add the cooked beans and toss
until the beans are hot.
- Sprinkle with parsley, nutmeg,
salt and pepper and put into a warm serving dish.
An original way of serving young French
beans to make them into a very special vegetable dish, particularly good
with chicken or fish.
Serves 4 - 6
