Ingredients :

500g

yellow lentils

oil

onions, finely sliced

tomatoes, skinned and chopped

turmeric

chili powder

tomato paste

Method :

Soak lentils in enough water to cover for 30 minutes. Heat oil in a frying pan. Fry onion until tender. Add tomatoes, turmeric and chili. Cook, stirring for 5 minutes. Bring lentils to the boil. Stir in onion mixture. Lower heat. Simmer 1 hour. Stir in tomato paste.

Makes about 3 cups
