Red River Chili Cooking Recipes

Ingredients :

ground pork

ground beef

medium size onions, chopped

green pepper, chopped

garlic cloves, finely chopped

can crushed tomatoes, including juice

can tomato sauce

chili powder

can tomato juice


dried basil



can pinto or kidney beans, drained

Method :
  1. Put the pork, beef, onion, pepper and garlic in a 3 quart microwavable casserole.
  2. Blend together with a fork or your fingers.
  3. Cover and microwave on high 100% for 8-10 minutes.
  4. Drain off the excess liquid.
  5. Add the tomatoes, tomato sauce, chili powder, tomato juice, water, basil, salt and paprika.
  6. Cover and microwave on medium 50% for 30-35 minutes, stirring after 15 minutes.
  7. Add the beans and stir well.
  8. Cover and microwave on medium 50% for 8-10 minutes.
  9. Let stand, covered, for 5-10 minutes before serving.

Serves 6-8

Note :

How could a chapter on beans not include chili ? This one is nice and hot, full bodied and rich.

After you have made a chili recipe that you like, improvise and invent your own particular stew. Add as much "heat" as you and your family can take.
