Lentil Soup Cooking Recipes

Ingredients :

lentils, washed and drained

water

carrots

celery

onion

slices bacon, cut into small pieces

cloves garlic, finely chopped

bay leaf

chopped parsley

salt

dried thyme

dried tarragon

dried oregano

pepper

tomatoes, chopped, juice reserved

Method :
  1. Put the lentils, water, carrots, celery, onion, bacon, garlic and bay leaf in a 31/2 quart microwavable casserole.
  2. Cover and microwave on high 100% for 15 minutes, stirring after 8 minutes.
  3. Stir in the parsley, salt, thyme, tarragon, oregano and pepper.
  4. Cover and microwave on high 100% for 5 minutes.
  5. Stir in the tomatoes and the reserved juice.
  6. Continue microwaving, covered, on high 100% for 20-25 minutes, stirring every 5 minutes, until the lentils and vegetables are tender.
  7. Remove the bay leaf before serving.

Serves 6

Note :

A lot of ingredients plus very little fuss add up to a tasty, hearty soup.
