Jumping Bean Bake Recipes

Ingredients :

185g lima beans

250ml tomato paste

good pinch of cayenne pepper

1/2 tsp dried oregano

Topping :

2 tbsp dry breadcrumbs

2 tbsp grated, low fat hard cheese

Method :
  1. Place beans in a bowl and add sufficient water to cover.
  2. Leave to soak overnight.
  3. The following day, drain the beans and rinse thoroughly under cold, running water.
  4. Place in a saucepan, add fresh water to cover.
  5. Bring to the boil, then reduce heat to simmer for 1 hour, or until tender.
  6. Drain beans, discard water.
  7. Set aside.
  8. In a bowl, combine the tomato purée, cayenne pepper and oregano.
  9. Lightly grease a pie dish or small casserole.
  10. Arrange a layer of beans on the base, cover with a layer of tomato; repeat layering.
  11. Top with grated cheese and breadcrumbs.
  12. Bake in a preheated oven for 15-20 minutes, or until topping has browned.

As an accompaniment - Serve hot, garnished with chopped parsley.

As a main course - Serve hot, accompanied by a crisp, green salad.

Serves : 2 as a main course; 4 as a side dish
