Combine the scallions and butter
in a 1 quart microwavable casserole.
Microwave on high 100% for 2 to 3
minutes.
Stir in the green beans, chopped
tomatoes, reserved juices, garlic, thyme and pepper.
Cover and microwave on high 100%
for 6 to 9 minutes, stirring after 31/2 minutes, until
the beans are crisp tender.
Dissolve the cornstarch in 1 tbsp
of cold water and stir it into the vegetables.
Cover and microwave on high 100%
for 1 to 2 minutes until thickened and bubbly.
Allow the vegetables to stand for
2 minutes before serving.
Serves 4
Note :
Scallions and tomatoes blend nicely with
green beans for a fresh, new look. The juice from the tomatoes,
thickened with a little cornstarch, makes a tasty sauce.
Cooking Tip:
Frozen vegetables can be completely cooked
in the microwave without ever leaving their packages. Strip off the
paper wrapping, punch a few holes in the top of the cardboard box and
microwave on high 100% for 4 to 7 minutes, until done.
