Broad Beans with Bacon Recipes

Ingredients :

250g frozen broad beans

2 tbsp olive oil

125g pancetta, finely diced

1 onion, finely chopped

1 garlic clove, crushed

400g can chopped tomatoes

1 sage sprig

1 tsp sugar

salt and pepper

Method :
  1. Cook the beans in salted boiling water, 5-6 minutes.

  2. Put the oil and pancetta in saucepan and heat gently until the fat runs from the pancetta.

  3. Add onion, garlic and cook gently for 5 minutes until softened but not colored.

  4. Add tomatoes and their juice, sage, sugar, salt and pepper to taste.

  5. Bring to boil, stir.

  6. Drain the beans add add to the tomato sauce, simmer, uncovered 10 minutes, shaking the pan constantly.

  7. Ready to serve.
