Combine the beans, brown sugar, molasses and
mustard in a 2-quart microwavable casserole. Stir in the onion and bacon and cover. Microwave on high 100% for 12-14 minutes,
stirring every 4 minutes.
Mix the cornstarch with 1 tbsp of water to make a
smooth paste and stir this into the bean mixture. Cover and microwave on high 100% for 2-3 minutes
until thickened and bubbly. Allow to stand, covered for 5 minutes before
serving.
Serves 6-8
The classic version of the dish calls for
a lengthy cooking time, but this recipe made in the microwave is idea
