size onion, cut into 8 pieces
slices
bacon, cut into 1/2" pieces

Method :
- Combine the beans, brown sugar, molasses and
mustard in a 2-quart microwavable casserole.
- Stir in the onion and bacon and cover.
- Microwave on high 100% for 12-14 minutes,
stirring every 4 minutes.
- Mix the cornstarch with 1 tbsp of water to make a
smooth paste and stir this into the bean mixture.
- Cover and microwave on high 100% for 2-3 minutes
until thickened and bubbly.
- Allow to stand, covered for 5 minutes before
serving.
Serves 6-8
Note :
The classic version of the dish calls for
a lengthy cooking time, but this recipe made in the microwave is idea
for the cook in a hurry.
Cooking Tip :
Beans continue to absorb liquid during
standing time.
