Adzuki Bean Simmer Recipes

Ingredients :

250g raw adzuki beans

90g carrot, diced

1 cup onion, diced

2 cloves garlic, crushed

6 mushrooms, sliced

1/2 tsp dried basil

600ml vegetable stock

ground black pepper

1 tbsp soy sauce

Method :
  1. Soak beans in water overnight.
  2. Drain beans in a colander and rinse well under cold water, then place in a saucepan, cover with fresh water and bring to the boil.
  3. Boil rapidly for 10 minutes, then reduce heat and simmer gently for 1 1/2 hours or until softened.
  4. Drain beans.
  5. Return to the saucepan and add all other ingredients, except soy sauce.
  6. Bring to the boil, reduce heat and simmer gently for 45 minutes.
  7. Add soy sauce and stir.
  8. Serve hot.

Serve with wholemeal Pancakes folded in four, or with chunks of crusty wholemeal bread.
