Tomato and Onion Filling Recipes

Ingredients :

1 small onion, finely chopped

2 tbsp water

1 medium tomato, chopped

1/2 tsp fresh chopped basil or oregano, or good pinch of dried

ground black pepper

Method :
  1. Heat the water in a frying pan, add the onion and sauté gently until transparent.
  2. Add tomato, fresh or dried herbs and black pepper.
  3. Simmer till tender. Set aside.
  4. Slice off the tops of the baked potatoes.
  5. Using a tsp, carefully scoop out enough of the potato flesh to leave a firm shell.
  6. Combine the potato flesh with the tomato mixture.
  7. Spoon back into the potato shells.
  8. Reheat in oven for about 5-10 minutes.
  9. Serve immediately.
