Rice and Leeks Recipes

Ingredients :

leeks, trimmed and washed

olive oil

long grain rice

tomatoes, peeled and coarsely chopped

brown sugar

boiling water

freshly ground black pepper, to taste

squeeze of lemon juice

Method :
  1. Slice leeks into 3cm sections, crosswise.
  2. Heat oil in large fry pan.
  3. Add leeks, forking through to break layers.
  4. Cook, stirring occasionally, for 5 minutes.
  5. Add rice, mix through.
  6. Fry, stirring occasionally, until rice is opaque.
  7. Add tomatoes, sugar and seasoning.
  8. Pour in water.
  9. Cook gently, covered, until all liquid is absorbed and rice is tender.
  10. Add more water if necessary.
  11. Sprinkle with lemon juice to serve.
