Pickled Onions Recipes

Ingredients :

small white onions

salt

water

white vinegar

tarragon vinegar

brown sugar

black peppercorns

ground allspice

whole cloves

cinnamon stick

Method :
  1. Wash unpeeled onions and place in a bowl.
  2. Mix half the salt with half the water.
  3. Pour brine over onions to completely cover them.
  4. Weight with a plate to ensure onions are totally immersed.
  5. Leave for 12 hours.
  6. Drain and peel onions.
  7. Place in a clean bowl.
  8. Mix remaining salt and water together.
  9. Pour over onions, cover and leave for 24 hours.
  10. Drain and wash onions, pack into sterilized jars, leaving plenty of space at top.
  11. Place vinegars, sugar, peppercorns, allspice, cloves and cinnamon stick in a saucepan.
  12. Stir over low heat till sugar dissolves.
  13. Bring to the boil.
  14. Reduce heat and simmer for 5 minutes.
  15. Strain mixture through a fine sieve.
  16. Pour over onions until it comes at least 1cm above them.
  17. Seal, label and leave for 3 months.
  18. Serve with salads, antipasto or on sandwiches.
