Fennel with Red Onions Recipes

Ingredients :

2 medium fennel bulbs

1 tbsp olive oil

1 medium red onions, sliced

2 garlic cloves, minced

1 tsp sea salt

1/2 tsp white pepper

1/4 cup finely chopped fresh basil

Method :

Wash fennel well and cut each bulb into eighths. Heat oil in medium skillet and sauté onion, garlic, salt and pepper until onion is just tender. Stir in fennel and mix to coat well with olive oil. Lower heat and sauté gently until fennel is tender. Add basil and cook for 2-3 minutes longer.

The often overlooked fennel bulb has a distinctive anise flavor that's complemented by red onions and basil in this savory side dish.

Serves 4 - 6
