Belgian Leek Soup Recipes

Ingredients : |

60g
250g
500g
1.5 liters
1/2 cup
6 slices |
butter or margarine
leeks, washed and sliced
potatoes, diced
beef stock
cream
toasted French bread
freshly ground black pepper, to taste
nutmeg
thin slices of leek for garnish |
Method :
- Melt butter in a large saucepan.
- Fry leeks gently for 3 minutes.
- Add potatoes, beef stock and
seasoning.
- Bring to the boil.
- Cover, reduce heat.
- Simmer for 40 minutes, stirring
occasionally.
- Before serving, stir in cream.
- Place one piece of toast in each
soup bowl.
- Pour over the hot soup.
- Sprinkle lightly with nutmeg and
thin slices of leek.
Serves 6
