Belgian Leek Soup Recipes

Ingredients :




1.5 liters

1/2 cup

6 slices

butter or margarine

leeks, washed and sliced

potatoes, diced

beef stock


toasted French bread

freshly ground black pepper, to taste


thin slices of leek for garnish

Method :
  1. Melt butter in a large saucepan.
  2. Fry leeks gently for 3 minutes.
  3. Add potatoes, beef stock and seasoning.
  4. Bring to the boil.
  5. Cover, reduce heat.
  6. Simmer for 40 minutes, stirring occasionally.
  7. Before serving, stir in cream.
  8. Place one piece of toast in each soup bowl.
  9. Pour over the hot soup.
  10. Sprinkle lightly with nutmeg and thin slices of leek.
