2 oz dried shiitake mushrooms, soaked in
warm water for 20 minutes
1 tbsp oil
1 tsp finely chopped fresh root ginger
2 spring onions, finely chopped
1 garlic clove, crushed
8 oz button mushrooms
8 oz can straw mushrooms, drained
1 tsp chili bean sauce
2 tsp dry sherry
2 tsp dark soy sauce
water pinch of sugar
pinch of salt
1 tsp sesame oil
Method :
Drain the mushrooms and squeeze them
dry. Discard the hard stalks. Heat oil in the wok over moderate
heat, add ginger, spring onions, garlic, stir-fry briskly for 5-10
seconds. Add dried mushrooms and button
mushrooms and cook for 5 minutes, stir. Add the straw mushrooms, chili bean
sauce or chili powder, sherry, soy sauce, stock, sugar, salt and
sesame oil. Mix well, stir-fry for 5 minutes. Ready to serve.
