Sherried Mushroom Soup Recipes

Ingredients :

butter or margarine

mushrooms, finely chopped 

can mushroom soup concentrate

milk

cream

sherry

sour cream

freshly ground black pepper, to taste

croutons and chopped chives for serving

Method :
  1. Melt butter in pan.
  2. Cook mushrooms for 4 minutes until tender.
  3. Pour in soup, stirring lightly.
  4. Gradually add milk, stirring until soup has colored and developed flavor.
  5. Add cream, sherry and seasonings.
  6. Serve in warmed soup bowls.
  7. Garnish with sour cream, croutons and a sprinkling of chopped chives.
