1lb (500g) mixed mushrooms, such as button
field, shiitake, oyster and cepes
2 tbsp vegetable oil
2 tbsp butter
2 cloves garlic, crushed
1 tbsp balsamic vinegar
2 tbsp chopped fresh flat-leaf parsley
2 tsp chopped fresh thyme
sea salt and freshly ground black pepper,
to taste
8 wedges Turkish bread
2 tbsp olive oil
flat-leaf parsley, for garnish
Method :
Wipe
mushrooms clean using a damp paper towel. Cut into even slices. Warm
oil and butter in a heavy-bottomed frying pan over medium heat. Add
garlic and fry until aromatic, about 1 minute. Stir in mushrooms and
cook for 5 minutes, stirring constantly.
Remove from
heat and add balsamic vinegar, parsley, thyme and salt and pepper to
taste.
Preheat a
broiler (grill) or barbecue. Brush both sides of bread with olive oil.
Broil (grill) until golden, 1-2 minutes per side. Arrange grilled bread on
serving plates and top with mushrooms. Serve garnished with parsley.
Hint - If Turkish bread is
unavailable, use preferred, thickly sliced bread.
