Asian Greens Stir-Fry with Shiitake Mushrooms Recipes

Ingredients :

1 lb (500g) Asian greens, such as bok choy, choy sum or Chinese cabbage

2 tbsp vegetable oil

1 red bell pepper (capsicum), seeded and sliced into strips

1 small red chili pepper, seeded and sliced

10 scallions (shallots / spring onions), trimmed and sliced

2 celery stalks, sliced

1 lemongrass stalk, trimmed and chopped

2 cloves garlic, crushed

1 inch (2.5 cm) piece fresh ginger, peeled and chopped

6 oz (180g) shiitake mushrooms, sliced

3 tbsp soy sauce

cooked egg noodles or jasmine rice, for serving

Method :

Wash Asian greens well and pat dry with paper towels. Trim off root ends and slice greens into 2.5 inch (6cm) lengths. Warm oil in a wok or large frying pan over medium heat, until oil is hot but not smoking. Add bell pepper, chili pepper, scallions, celery, lemongrass, garlic and ginger. Raise heat to medium-high and stir-fry for 2 minutes. Add greens and mushrooms and stir-fry for 2 minutes. Reduce heat to low, cover and allow mixture to cook slowly until greens are tender-crisp, about 2 minutes. Remove from heat and stir in soy sauce.

Serve immediately with egg noodles or jasmine rice.
