Steamed Hairy Gourds With Tri-Shreds Cooking Recipes

Ingredients :                                                                               Marinade :

2 hairy gourds (about 375 g)

113 g pork (half lean half fat)

4 dried black mushrooms

red chili shreds

spring onion shreds

1/2 tsp grated ginger

1 tsp grated garlic


Sauce :


1 cup of liquid from steaming hairy gourds and water

1 tsp caltrop starch


1/2 tsp salt

1.2 tsp sugar

1/3 tsp oil

1/3 tsp caltrop starch

1/3 tsp light soy sauce

pinch of pepper


Seasoning :


1/2 tsp salt

1/2 tsp light soy sauce

3/4 tsp sugar

2 tsp oyster sauce

pinch of pepper

Method :
  1. Shred pork.
  2. Soak mushrooms until soft and shred.
  3. Mix the above ingredients with marinade.
  4. Peel and wash hairy gourds.
  5. Score gourds with several slashes.
  6. Gently stir fry with a little oil.
  7. Dish up and arrange on plate.
  8. Mix with seasoning.
  9. Steam over high heat for 15 minutes.
  10. Add pork, mushrooms and ginger.
  11. Steam for another 5 minutes.
  12. Take out and pour out liquid.
  13. Stir fry grated garlic until fragrant.
  14. Add sauce.
  15. Bring to the boil.
  16. Stir in red chili.
  17. Pour over hairy gourd.
  18. Sprinkled with spring onion.
  19. Serve.
