Spring Rhubarb Cobbler Recipes

Ingredients :

1/3 cup

1.5 cups

2 tsp

sugar

1/2 inch pieces fresh rhubarb

butter or margarine

dash ground cinnamon

few drop red food coloring

biscuit topper

Method :
  1. In small saucepan, combine sugar and cinnamon.

  2. Add rhubarb, 1/2 cup water, and food coloring.

  3. Cook and stir till mixture boils; cook 2 minutes more.

  4. Stir in butter.

  5. Pour rhubarb sauce into 2-cup baking dish or 2 individual casseroles.

  6. Spoon biscuit topper over bubbling hot sauce.

  7. Bake at 400° for 25-30 minutes.

  8. Serve with light cream.

Serves 2
